Fish with creamy leeks!

This is an Epicurious recipe for fish with creamy leeks. It was INCREDIBLY easy and quite tasty. I LOVE leeks and I'm always looking for new ways to cook with them, but next time I may try actually adding something in addition to the leeks. Not sure what.

I also used light sour cream and it was still great! I squeezed on a little fresh lemon juice, too. :) I didn't have halibut or cod, so I used relatively thin tilapia filets and cooked for just 6 or 7 minutes. I'm totally making this one again.

Edit: I notcied in the reviews of this recipe, a lot of people subbed vermouth or white wine for the second 1/3 cup of water. I think that would be really good. Also, if I were going to add more veggies, it would be little steamed red potatoes or carrots sliced thin, I think.

so lazy!!

Well I haven't updated in WAY TOO LONG! I'm back on the healthy eating kick so to jumpstart things, here's a good wrap that's REALLY easy.

I got these low-carb whole wheat/flax pitas that only have 60 cals and 8g of carbs, 4 of which are fiber. :) They're soft and pretty tasty, too! I think the brand is called Joseph's, but I'll double-check that. Yep, Joseph's and strangely I got them at Wal-Mart.

I spread some roasted red pepper hummus on the pita, then pile on some spring mix/spinach, sliced roma tomaotes, alfalfa sprouts, and 100 calories worth of guacamole on top! The guac was overkill, but it was pretty tasty. I would have added sliced cucumbers if I had any!

Today I made another version of this, minus the hummus.. I spread guacamole on the bottom of the pita, then did everything else the same - except I added salsa on top. :) Less fat and still extremely filling!
